Brendan, Thank you. I drank this home brew in Japan years ago. My neighbors there were farmers who grew rice in the spring/summer, cabbages in the fall. They made this white sake in a big pot in the winter. We had some after dinner at their home one evening and they gave me a bottle to take with me. It was sweet and delicious. Better than hot cocoa. I have found recipes on the internet in the past, but was not sure how to procure the elusive koji-rice. Your web site made it easy. I feel lucky to have finally found it.
